French Toast and Cinnamon Apples

This breakfast is a combination of favourites, one old and one new. 

French toast for me is a childhood favourite, something I used to love helping my dad make every Sunday.

The cinnamon apples is quite a new recipe I fell in love with at first bite. I first tried this when we stayed at a B&B just outside of Algonquin Park, Canada and these apples were served with pancakes. I'm not a massive pancake fan but I thought these would be just as delicious with French toast. And they are. 
Serves 2

For the french toast;

4 thick slices of bread 
2 eggs
100ml milk
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp brown sugar
1/2 tsp vanilla extract

Beat together eggs, milk, spices, sugar and vanilla extract.

Lightly oil you pan and place over medium heat.

Dunk each slice of bread into the egg mixture, soaking both sides. Place in pan and cook on both sides until golden. 

For the Cinnamon Apples;

2 apples
40g butter
75g brown sugar
1 tblsp cornstarch (cornflour)
175ml water
1/2 tsp cinnamon

Peel, core and slice the apples.

Melt the butter in a pan.

Stir in the sugar, cornstarch, water and cinnamon.

Add the apples to the sauce, cover and cook over medium heat for 10-15 minutes. Stir occasionally.

Serve the apples warm over the French toast.

I like to save any leftovers of the cinnamon apples so I can mix them with some porridge the next day, delish!
