Hello everyone!
This weekend I have spent a lot of time in the kitchen, up to my elbows in quinoa and chia seeds....I think I need a Pinterest detox!
And while some recipes I tried were massive fails, like the healthy brownieballs blobs, I found some recipes that I can't wait to experiment with some more.
An absolute winner in my books is the chia pudding. I'm really enjoying trying different recipes with chia seeds at the moment because they are so versatile you can soak 'em, sprinkle 'em or blend 'em in both sweet and savoury dishes. On top of that these little seeds are packed with omega-3 fatty acids, fibre, antioxidants and protein.
This pudding recipe is as easy as it gets and you can serve it up as breakfast, a snack or even dessert.
Here's what you're going to need;
240 ml Coconut Milk
3 tbsp Chia Seeds
1 tsp Maple Syrup
1 tsp Vanilla Extract
1/2 tsp Ground Cinnamon
Pinch of salt
Put everything into a bowl and mix it all together.
Pop the mixture into the fridge and let it soak over night.
You can serve the mixture straight out of the bowl or if you prefer a smoother texture, like me, pour it into a blender and blend for a minute.
Top with with whatever your heart desires.
