Meet the new Kale....Cauliflower

Last year you constantly heard about Kale, it was baked into chips, blitzed into smoothies, chopped into salads, stir fries and soups. You name it, Kale was being added to it ! But over the past few months cauliflower has been creeping into recipes. Whether it's minced, roasted or mashed this veg, which is also part of the cruciferous family appears to be Kales biggest contender. And it punches its fair share of nutritional value as well, being loaded with vitamin C, K, B6, fibre and omega-3 fatty acids. If you are looking for a veg that will help your skin glow and strengthen your hair and nails, I would recommend adding cauliflower to your basket.

What I currently love about experimenting with cauliflower is it's versatility. I've tried it as a pizza base, made it into couscous, roasted it, mashed it and puréed it into soups. Cauliflower can be used to make a lot of substitutes for a gluten free diet or those just trying to cut back on carbs.
Here are a couple recipes you might want to try it in;

Aloo Gobi (Cauliflower Curry)
serves 6

You will need:

50 ml Vegetable oil
1 large onion, cut into small pieces
Large bunch of coriander, stalks and leaves separated and roughly chopped
3 green finger chillies, chopped ( I like it spicy so adjust accordingly)
1 Cauliflower head, cut into florets
3 large potatoes, chopped into small pieces
2 cans of chopped tomatoes
1 tsp cumin seeds
2 tsp turmeric
pinch of salt
2 tsp garam masala
Ginger, a piece about the size of your thumb, chopped
3 cloves of garlic, chopped

Directions

Heat oil in a large saucepan over medium heat.

Add chopped onion and cumin seeds to the pan. Stir together and cook until onions become golden and translucent.

Stir in coriander stalks, turmeric, garam masala and a pinch of salt.

Pour in chopped tomatoes and add chopped chillies, garlic and ginger.

Add potatoes and cauliflower with about 50ml of water.

Give everything a god stir making sure the potatoes and cauliflower are coated with the curry sauce then cover and let simmer for about 30 minutes.

Remove from heat and add coriander leaves.

Serve with brown rice or if you're going all out with the cauliflower, try making Cauliflower couscous.

Cauliflower Couscous

What you need

1 Head of Cauliflower, chopped 
75ml water
1 tsp salt

Place ingredients in food processor and blitz until it resembles couscous. Voila! It really is that simple.
